Moroccan Chickpea, Apricot, Bell Pepper & Zucchini Curry with Couscous


For the Curry:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1/2 cup dried apricots, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • Salt and pepper to taste

For the Couscous:

  • 1 cup whole wheat couscous
  • 1 1/4 cups vegetable broth
  • 1 tbsp olive oil
  • Salt to taste


  1. Prepare the Couscous:

  • Bring vegetable broth to a boil. Stir in couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork. Add olive oil and salt to taste.

2. Make the Curry:

  • Heat olive oil in a large skillet over medium heat. Add onion and garlic, and sauté until softened.
  • Add bell pepper, zucchini, cumin, coriander, paprika, and cinnamon. Cook for another 5 minutes.
  • Stir in chickpeas, apricots, and diced tomatoes. Simmer for 15-20 minutes, until vegetables are tender. Season with salt and pepper to taste.

3. Serve

  • Serve the curry over couscous.
